Online and face-to-face (as soon as government guidelines allow) in the Cook with Steph Kitchen

 

My Healthy Cooking Skills Programme is designed for any young person wanting to learn how to cook delicious recipes from scratch or wanting to achieve the 3-6-month  skills section for their Duke of Edinburgh Award. 

 

This activity may count towards your Duke of Edinburgh’s Award Skills Section, please check with your D of E Leader for applicability before booking.

 

Steph's recipes will inspire young people to be able to create delicious healthy food, whilst gaining essential life skills and confidence building experiences.  Good nutrition, cooking healthier meals, kitchen hygiene, time management and how to shop and cook economically are all at the heart of the experience - and of course having fun in the kitchen!!!

 

Steph is passionate about healthy eating, encouraging good eating habits & learning good core skills. She brings this and expert nutritional advice to all of her recipes and classes.

Steph's courses support young people with SEND both online and face to face in the kitchen.

The online ZOOM courses run over a 12-week period with interactive cook along sessions & support every week.  All the recipes are provided as well as step-by-step tuition from Steph.  Students will  be encouraged to photograph their dishes, plus fill in the pack provided for evidence, if they are completing it for their D of E. 

As a former Cookery Editor and former teacher of GCSE Food and Nutrition at Weydon Secondary School, Surrey, Steph will be able to complete the online assessment report at the end of the course.

Classes are fun, informal and provide students with a fantastic opportunity to try a diverse selection of healthy recipes and cook supper for the family at the same time, recipes cards will be provided.  

 

   £175 for the 12 - week online Zoom Course with interactive tuition, & plenty of tips on how to eat and cook healthily -  max 6 students.  

Start date and time determined to fit in with the group.

Buy the courses to cook at home independently with step by step videos,  recipe cards and online support, £75 plus admin fee (coming soon)

OR

Face to face courses will hopefully return SOON in line with Government advice.

START UP Course 1 is for those  of you beginning to cook & can be used for your Bronze D of E Award and  FOLLOW ON Course 2 is for those of you wanting to improve your skills or complete your 6 month Silver D of E Award.

Energy boosting fruit & nut granola -

healthy eating, reading a recipe, hygiene & safety, good knife skills & making a healthy breakfast

Week 2

Healthy chicken korma -

Handling high risk foods, cross contamination, how to make a healthy lower fat curry & cook fluffy rice

Week 3

Feel good fish finger sandwich & tartare sauce -  enrobing fish & understanding sustainability, using a healthier cooking technique

Week 4

Oven baked risotto with bacon, peas & Parmesan - working with Arborio rice, dry frying bacon to reduce the fat content

Week 5

Falafel burgers & sweet potato wedges -moulding & shaping, knife skills, cooking a healthy, meat free meal

Week 6

Super healthy roasted vegetable and pesto pizza - understanding yeast and gluten, adding fibre to a bread dough

Week 7

Baked salmon with wholewheat ginger noodles - marinating,  using a wok, stir frying as  a healthy cooking method

Week 8

Steph's tasty bolognese -

Fine knife skills, tenderising meat & using leaner cuts of meat

Week 9

Fajitas with fresh tomato salsa -

Making your own spice blend, using a healthier oven baked recipe

Week 10

Mac and cheese with a broccoli twist -making a roux sauce, cooking pasta al dente, adding veg & fibre

Week 11

Soda bread and speedy tomato soup -

making a wholemeal, high fibre dough, making  & blending a healthy soup

Week 12

5 a day muffins

Cooking with raising agents, adding veg, vitamins & fibre to a cake recipe.

FOLLOW ON COURSE 2

Perfect all day omelette -

healthy eating, reading a recipe, hygiene & safety, good knife skills,  working with eggs

Week 2

Blueberry or savoury high fibre pancakes - understanding heat control & making a high fibre batter 

Week 3

Flatbreads with hummus and guacamole - making  an unleavened bread, creating healthy dips & making a nutritious snack

Week 4

Bangers & mash with onion gravy -

a  healthier oven baked version, making an onion gravy & perfect fluffy mash

Week 5

Protein packed pork satay & peanut dipping sauce -  marinating, using the grill & leaner meat cuts 

Week 6

Fish tagine & giant herby couscous -Working with white fish, Moroccan 

spices, cod and healthy grains

Week 7

Veggie chilli loaded nachos - using fresh herbs and spices, making a meat free meal and homemade nachos

Week 8

Chicken & chorizo Basque -

Jointing a chicken, knife skills, reducing the fat content of a recipe

Week 9

Oven baked spring rolls & soy dipping sauce - shaping and working with a lower fat filo pastry

Week 10

Veggie packed lamb koftas & Greek salad - adding veg & Grilling lamb for a healthier dish & making a salad dressing

Week 11

One pot  roast dinner -

cooking a complete balanced meal, good time management

Week 12

Rustic apple and blackberry tart -

 making a high fibre shortcrust pastry, with a Vit C packed filling
